Lobster Tortellini with Broccoli

Indulge in the robust flavors of my creamy Lobster Tortellini with Broccoli, a dish that marries the sweetness of lobster with the richness of a velvety cream sauce. Tortellini that will transport your taste buds to a seaside escape cooked in less than 10 minutes!

Ingredients:


  • 1 lb cooked lobster meat (frozen is perfectly okay, this can also be replaced with shrimp or chicken)

  • 1 package (9 oz) cheese tortellini

  • 2 cups broccoli florets (can be replaced with your favorite veggie - I happened to have broccoli picked fresh from my garden)

  • 1 cup heavy cream

  • 1/2 cup grated Parmesan cheese

  • 3 cloves garlic (minced)

  • 1 tbsp tomato pasta (a handful of chopped cherry tomatos is a good substitute)

  • 1 shallot or 1/2 onion (finely chopped)

  • 2 tbsp butter

  • 1 lemon

  • Salt and pepper to taste

  • Italian seasoning

  • 1/2 tsp red pepper flakes (optional, for a bit of heat)

  • Fresh basil (chopped, for garnish)



 

Instructions:


Cook the Tortellini:

  • Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to the package instructions. Once cooked, drain and set aside.

Prepare the Sauce / Broccoli:

  • In a large skillet, melt the butter over medium heat. Add the minced garlic, chopped shallot, and broccoli sautéing until fragrant, translucent, and softened about 3-5 minutes. Stir in tomato paste.

  • Lower the heat and stir in the heavy cream, allowing it to heat through but not boil. If it is not thickening, gradually turn up the heat - then reduce.

  • Add a squeeze of lemon juice and sprinkle of italian seasoning. Stir in!

  • Gradually add the grated Parmesan cheese, stirring continuously until the cheese is fully melted and the sauce is smooth. Season with salt, pepper, and red pepper flakes (if you're kicking it up a notch).

Combine Ingredients:

  • Gently fold the cooked lobster meat into the creamy sauce, ensuring it is well-coated and heated through.

  • Add the cooked tortellini, tossing gently to combine and coat evenly with the sauce.

Serve:

  • Serve the lobster tortellini in bowls, garnished with freshly chopped basil.
