Patriotic Berry Cake with Whipped Cream Frosting

This vibrant and festive treat is perfect for summer gatherings, specifically for the Fourth of July or Memorial Day. With its layers of fluffy cake, fresh whipped cream icing, and a mix of red and blue berries, this dessert not only looks stunning but also offers a fresh burst of flavors that embody the essence of summer. Let’s bring a touch of red, white, and blue to your table with a dessert that’s both delicious and memorable!




Ingredients:

Cake

  • Vanilla or pound cake mix (Yes - It's okay to cheat and use a box mix!)

Icing

  • 2 cups heavy whipping cream

  • 3/4 cup powdered sugar

  • 1 teaspoon vanilla extract

  • 4 ounces cream cheese (regular, full fat)

Berries

  • Strawberries

  • Blueberries

  • Raspberries



Instructions:

Bake the Cake

  • Bake cake following the instructions on the box mix. I recommend using two, 8 inch round cake pans.

  • Allow cake to fully cool before assembling the cake.


Make the Whipped Cream Frosting

  • Place the entire mixing bowl and mixing beaters in the freezer for at least 5 minutes, while you gather ingredients.

  • Add heavy cream into the chilled bowl and beat until it begins to thicken.

  • While mixing, slowly add 1/4 cup powdered sugar into the cream (reserving 1/2 cup for later). Continue to beat, and add vanilla.

  • Beat until light and fluffy and holds a soft peak. This took a lot longer than I expected! I recommend starting at a low speed and gradually increasing.

  • Place the whipped cream in the fridge for the moment.

  • In a new mixing bowl, add cream cheese and blend until fully smooth. 

  • Gradually add 1/2 cup of powdered sugar and blend until fully combined with the cream cheese.

  • Scoop out 1/4 cup of the glazed strawberries from the fridge, and blend with cream

  • Remove whipped cream from fridge and add one large scoop of whipped cream to the mixing bowl and blend on low. Mix just until the cream cheese mixture has gotten a bit fluffier. Continue to add the remaining whipped cream and blend on low just until all ingredients are combined. Be careful not to over mix!


Assemble the Cake

  • Place the first layer of cake on your cake plate.

  • Put a thin layer of whipped cream on the cake. Place a mix of berries on the layer of whipped cream then top the berry layer with more whipped cream.

  • Place the second layer of cake on the whipped cream.

  • Top the cake with another layer of whipped cream and decorate with berries on top however you like!

  • I recommend keeping the cake cold until serving!
